201' 1"11" x 1' 5"Soil: Warm, well-drained soil enriched with composted manure or other rich compost. Position: Full sun. Feeding: Needs more nitrogen than other vegetables. Mix an organic fertilizer into the soil before planting, following label application rates. When tassels form, feed plants second time. Single Plants: 1' 1" (35cm) each way (minimum) Rows: 11" (30cm) with 1' 5" (45cm) row gap (minimum) Sow and Plant: Wait until the soil is warm to sow sweet corn. Soak seeds in water overnight before planting them 1 inch deep and 6 inches apart. Thin to 12 inches apart when the plants are 6 inches tall. Notes: Plant in blocks of at least 15 plants, all the same variety, to insure good wind pollination. Keep well watered in dry spells. Harvesting: Sweet corn is ready when the ears feel firm and full when grasped, and a test kernel pierced with a fingernail released milky juice. Harvest in the morning, and promptly refrigerate ears to help them hold their delicate sugars.
Lettuce (Leaf)
 Rocky Top Lettuce Salad
2453"3" x 5"Position: Sun to partial afternoon shade. Feeding: None required Spacing: Single Plants - 4" apart / Rows - 4" with 6" row gap Sow and Plant: - Start seeds indoors in early spring, or simply sow fresh seeds where you want them to grow. Scatter seeds atop prepared soil, about one-half inch apart, and barely cover them before patting them into place. Sow more seeds in summer for a fall crop. - As lettuce seedlings grow, thin them so that the leaves of adjoining plants do not overlap. Mulch open space between plants to retain soil moisture and prevent weeds. Harvesting: You can pick individual leaves, use scissor or a knife to harvest handfuls of baby lettuce, or grow plants at proper spacing to get large, loose heads. Troubleshoot: Shallow lettuce roots need constant moisture. Do not allow the soil to dry out.
Pepper
 Poblano (Ancho)
91' 1"11" x 1' 3"Soil: well drained soil that holds moisture well. Position: Full sun Feeding: Mix an organic fertilizer into the planting holes as you transplant peppers. - Feed every two weeks with a liquid feed after the plants begin to blossom and set fruit. Sow & Plant: - Start indoors, and set out seedlings when the soil is settled and warm. Mulch to keep soil lightly moist at all times. - Tie heavy-bearing plants to a single stake to keep them from falling over.

61' 6"1' 4" x 1' 10"Planning: - Select several varieties that mature at different times to extend your harvest. - If you don't purchase plants, start seeds indoors in flats or pots 6 to 7 weeks before the average last frost date, and set out transplants when the soil is warm and all danger of frost is past. Preparation: - Select a site in full sun (except in very hot climates, where some shading will be desirable to prevent blossom drop). - A week or so before planting, fertilize with 1 to 1 3/4 pounds of 5-10-10 or its equivalent per 100 square feet. Planting: -Set up trellises, cages, or stakes at planting time. - Dig planting holes 18 to 24 inches apart if you plan to stake or trellis the crops, 36 to 48 inches apart if the plants aren't trained. - Mix a teaspoon of 5-10-10 fertilizer or its equivalent and 1 tablespoon ground limestone with soil at the bottom of the planting hole (except in high pH soils). - Pinch off two or three of the lower branches on the transplant and set the root ball of the plant well into the hole until the remaining lowest leaves are just above the soil surface. - Water generously and keep the plants well watered for a few days. Care: - Provide an even supply of water all season. - If staking or trellising, prune suckers to allow one or two central stems to grow on staked plants, two or three central stems for trellis systems. - Apply a thick layer of organic mulch 4 or 5 weeks after transplanting. - Side-dress tomato plants initially when the first clusters of fruit have formed and every 3 weeks thereafter. Two cupfuls of 5-10-10 or its equivalent are generally adequate for 20 plants. Harvesting: - For best flavor, harvest when firm and fully colored. Fruits will continue to ripened if picked half ripe and brought indoors.
